Fresh green peas are available at the Kuna Farmers Market. Being a cool-season vegetable,
peas are now at their best. In season and garden-fresh, peas are tender, sweet,
and packed with nutrients - a good source of eight vitamins, seven minerals, fiber
and protein.
The most common type of pea is the green or garden pea that is shelled to get to
the plump pea seeds inside. They are delicious simply steamed or combined with onions
or carrots. Try seasoning with a touch of dill weed that is also at the Market now.
One of my favorite early summer recipes for fresh garden peas is "New Potatoes
and Peas" that combines steamed peas and baby red potatoes in a white sauce.
Snow peas have flat pods that are edible. Snap peas are a cross between the snow
pea and the garden pea that produces both an edible pod and plump peas. Fresh snow
or snap peas can be added to green salads or stir fries. Both make a crisp, tasty
raw snack in lunches or served with a creamy or tangy dip. Sour cream and dill,
ranch, or mustard and horseradish are just a few choices.
All types of peas can be frozen and enjoyed later in the year. The peas are prepared
and blanched in boiling water for just a few minutes.
Stop by the market for fresh peas and recipes, spinach, lettuce mixes and rhubarb.
