Green Beans Are Ready For Canning and Freezing

Green beans are at their prime and now available in quantities for canning and freezing. According to the University of Idaho Extension recommendations, the best beans for preserving are young and tender with the seed just forming. The beans should snap easily. At this stage the beans are at the peak of flavor and texture.

Fancy Pickins offers a variety developed especially for canning. Beans can be purchased at the Market already picked or at the farm as u-pick. Karen will take orders at the Market or mid-week at 466-8510.

Cabalo’s Orchard and Gardens also has green beans for canning and freezing. See Cathy at the Market or call 922-3301 to order both picked and u-pick beans.

In addition to basic canning or freezing, beans can be pickled. Green beans canned in vinegar with dill, garlic, and a bit of hot pepper make a delicious, spicy condiment. Another pickled bean recipe is the bean salad mix. It is a pickled blend of green beans and yellow wax beans canned with baby limas, celery, and a few pieces of red bell peppers for color. To make a quick and easy five-bean salad, just open a jar and stir in kidney and garbanzo beans.

Market hours are from 9 am to 12 noon every Saturday through October 27. The location is at Sandstone Plaza at the west end of Main Street in downtown Kuna.
