One of the delights of shopping at the Farmers Market is that the selection of fruits
and vegetables changes each week. There is always a new vegetable that might not
be part of your family’s regular menus. Seeing the colorful array at the Market
booths is inspiration to experiment with novel recipes and try out unique flavors
throughout the season.
Here is what can happen. Bill and I came home from the Market last week with a picture-perfect
head of red cabbage, green onions, turnips and beautiful, deep orange apricots.
Our dinner on Saturday night evolved from these items and the desire for something
quick, easy and light on a hot evening. Chopped red cabbage and green onions, diced
turnips, olive oil and Worcestershire sauce became stir fry. We added a side of
cottage cheese and had our main course. A refreshing dessert was made in the blender
with fresh apricots, yogurt, a banana, honey, vanilla, and a dash of nutmeg. This
experimental meal was tasty and packed with fresh flavors. It is one we will have
again.
The vendors will offer some of their favorite recipes for preparing Market meals.
Here is a sampling of recipes available.
- Fennel, Spinach and Orange Salad
- Beets with Vinaigrette Dressing
- Apricot Glazed Lamb - See Bucks at the Market for their recipe and this week’s special
on leg of lamb. They will also have chickens this week.
- Zucchini Carrot Casserole
- Crookneck Casserole
- Crispy Kale
- Frittata with Green Onions or Leeks
- Corned Beef Cabbage (from scratch)
- Ranch Dressing with Fresh Dill and Herbs
- Cucumber Salad
Coming August 1: Kaveman Critters 4-H club will show animals and hold a bake sale.
